Open Mouth Laughs

Open Mouth Laughs are a Chinese Sweet dough deep fried (we all love deep fried dough) with sesame seeds. Sweets are an important part of the Chinese New Year celebration (and are for other things as well).

2 Cups all-purpose flour

1 Tsp baking powder

1 tsp Salt

2/3  Cup sugar

2 eggs (slightly beaten)

1 Tbl water

1 Tbl lard (or shortening)

1/2 cup water (for dipping)

1/2 Cup sesame seeds

8 cups oil for deep frying

Sift and combine dry ingredients (not the sugar). Mix eggs, sugar and lard with 1 table spoon water in a medium bowl. Slowly stir in dry ingredients. Knead 1-2 minutes until you have a soft silky dough. Roll into a 1" log and cut into 16 pieces with a sharp knife (or bench scraper). Roll each piece of dough into a ball and dip into the water then roll in sesame seeds (so they stick). Set aside. Heat oil in a heavy pan (I use cast iron) until 350 degrees F. Carefully place dough in the oil without crowding the pan (you will need to do several batches). Turn carefully after 1 minute. Fry for 1 more and remove with spider or slotted spoon and dry on paper towels. They will open like mouths laughing when you fry them.
