Chicken Lettuce Cups

Chicken Lettuce Cups (traditionally made with Pigeon) are popular in southern China for New Year because the word for lettuce sounds like making money or getting a raise.
1 lb Ground Chicken
1 can Water Chestnuts (chopped)
1 Bunch Green Onions
1 Cup Mushrooms (chopped)
1 large Carrot jullienned
1 Tbl Ginger (fresh grated)
1 Cloves Garlic (minced)
1 Tbl Hoisin Sauce
2 Tbl Rice Vinegar
2 Tbl Soy Sauce
1 Tsp Corn Starch (or tapioca starch)
In a bowl combine ground chicken with all the spices and sauces with ginger, garlic and green onions. Heat a Wok (or frying pan) until it is very hot. Add oil and immediately add chicken mixture and stir fry. Add Carrots and then mushrooms and water chestnuts until everything is cooked and bubbling.
I also like to add a bit of dried chili flake, but that's not traditional.
