Tonight's Cocktail - Champagne Cocktail

She was a poet. She was a short-story writer. She was a drama critic, a playwright and a screenwriter. She was a founding member of the Algonquin Round Table and an acerbic-tongued wit who could cut you to the quick with a deft turn of phrase. And she was a drinker.
Dorothy Parker is one of those writers who everyone has read, whether they've read her or not: her quips are known to one and all. Champagne was her drink of choice, and the subject of a little poem she wrote: "Three be the things I shall never attain: Envy, content, and sufficient champage". In her honor, we will feature the champagne cocktail during The Cocktail Hour, Tuesday night at 6pm.
1 sugar cube
2 dashes of Angostura bitters
Optional: 1 oz. cognac
Drop sugar cubes into a chilled champagne flute and soak with bitters. Fill with champagne. Garish with lemon twist. Optional: add 1 oz of cognac.
